I have talked to several of our friends who say they don’t like to cook pork chops because they are usually overcooked and dry.  Well, I agree there is nothing worse than a dried out pork chop or for that fact, any other meat.  I didn’t know it, but I have been doing a version of brining ever since I was a teenager.
